Morel Season

Official Morel season has begun!
Mr. Ladybug found his first Morels on the last day of March!
待ちに待ったアミガサタケの季節が始まったようです!今年最初の収穫です。 At the same time, our friend 'HAWKEYE' has been outposting in the woods. He has been looking hard (even under the leaves!) and sending us reports dutifully.
ここ1,2週間で急に気温が上がり、雨も降ったので森に住む友人(自称「鷹の目」)にキノコとタケノコが出てきたらすぐに知らせて欲しいとお願いしておきました。2,3日おきに連絡し合い、このようにレポートも入ってきます。

Afternoon in a swamp

Things are sprouting out vigorously and our surroundings are becoming green very quickly the past few weeks.
We ventured out to a swamp hoping to collect some cat tails.
This was a county park and people were hiking on the wooden bridge above us as we were roaming and crounching down on the mud. One lady yelled down to us and said "Thank you for being good sports!". Apparently, she thought that we were picking trash. We do that too, but not this time.
ここ1,2週間で急に春めいてきました。周りの景色に日に日に柔らかい緑色が増えていきます。
近所の沼地にCat Tails(日本語ではガマと言うそうです。日本では食べたことがありません。)を取りに行きました。公園の中にある沼地なので、頭上の橋の上を人々がハイキングしています。泥の中にしゃがみこんで何かしている私達に向かって「えらいわね~!」という声が降ってきました。どうやらゴミを拾っているのだと勘違いされたようです。残念ながら違いましたが。

Walking in a mud was extremely messy but surprisingly fun. It felt like we were kids all over again. We saw thousands of tadpoles.
泥の中を歩くと当然ながらドロドロになります。が、これが意外と子どもにかえったようで楽しいんです。数え切れないほどのオタマジャクシも見ました。

These are new cat tails. After discarding many (or most) layers, the very center and the tender part of the plant is edible and it is quite nice. They taste like in between green onion and cucumber.
この春出てきた芽。外側の皮を剥くと(というか殆ど中心に近いところまでの全ての皮を取り除く)真ん中にとても柔らかい黄緑色の部分があって、そこが食べられます。生で食べるとしゃきっとしてネギとキュウリの中間のような、なかなか乙な味です。

We collected bag full of them but edible parts must be 5% or less.
スーパーの袋いっぱいに収穫しましたが食べられる部分は5%かそれ以下、とにかくちょっぽりです。

I quickly boiled them and pickled them. Unfortunately, the bright light green color disappeared after being marinated in vinegar...
さっと熱湯に通してお酢と白だしに漬けてみました。とてもきれいな黄緑色をしていたんですが、マリネ液につけたらあっという間に色が黄色っぽくなってしまいました。
Cat Tails are very versatile. If you wait until summer, you can eat the top portion which taste just like corn. I think that a pair of gumboots will be a very good investment.
夏まで成長を待てば、てっぺんの部分がまた美味だそうで、これはトウモロコシのような味がするそうです。ぜひともゴム長靴を買わなくてはね!

Osechi - Happy New Year! (Japanese Style)

For the first time in ten years (since Ladybug has moved to the U.S.), I decided to make traditional Japanese 'Osechi' to celebrate the new year. Since it was the last minute decision, I used whatever we had available in the house, so this is more like an improvisational version of Osechi. In any case, they certainly helped to set the special mood for Japanese new year and we enjoyed it :)
私はアメリカに来て10年になるのですが、その間何故か一度もお節を作りませんでした。アメリカでは年が明ければすぐに仕事が始まるし、お正月という特別な時間をゆっくり味わうということはあまりないのです。けれども今回はふとそんな気分になって、お節料理を作ってみました。急に決めたことなのでありあわせの材料、適当お節ではありますが、お正月気分を味わうには十分でした。

We had Ozoni (sticky rice cake in broth), too. Mr. Ladybug was struggling with very sticky and chewy Mochi, but he didn't mind.
お雑煮も作りました。ちょっと唐辛子の利いた味噌風味にしてみました。やはりお正月はお餅を食べないとね。ジョンはねばねばのお餅と格闘していましたがちゃんと全部食べてくれました。

First Footing Brunch - A Happy New Year!

A happy new year!
Our year 2010 started at our dear friends' house. They invited families and friends for a new year's day brunch (they call this annual event 'First Footing' http://en.wikipedia.org/wiki/First-Foot ).
新年明けましておめでとうございます。
今年の元旦も私達の大好きな友人Mr.&Mrs. Sのお宅のNew Year's Dayブランチに呼んでいただきました。They live in a beautiful log home...Their Christmas decoration is very charming and tasteful as well.
とっても素敵なお宅で、クリスマスの飾りつけも素晴らしく気合が入っています。
Mr.S (I love his apron, by the way) is in charge of the kitchen. He is cooking egg's benedict, ham and potatoes on the skillet. It was so delicious that Ladybug had to have seconds.
Mr. S (前掛けがお茶目です)が台所を仕切っています。お客さん一人一人にエッグス・ベネディクト、ハム、ポテトが熱々で振舞われます。とてもおいしくて、私はお代わりをいただきました。
There're probably 20-30 people or so invited. We ate, drank, mingled and really had a good time.
30人近くも人がいたでしょうか。ブランチが済んだあとも1日中食べ、飲み、おしゃべりやゲームをして、真夜中までパーティは続いたようです。
LOTS of Champagne were consumed. Ladies liked Mimosa (champagne with orange juice).
一体何本のシャンペンが開けられたでしょうか。女性陣はミモザ(オレンジジュースとシャンペンのカクテル) がお気に入り。
Boys liked Black Velvet (beer cocktail made from guiness beer and champagne).
一方男性陣にはブラック・ベルベット(ギネスビールのカクテル)が人気でした。
There were tons of beautiful and delicous food, however, we were too busy eating and migling...so we came home with very few food photos.
熱々のブランチ以外にもたくさんのオードブルやベイクド・グッズ、デザートがあったのですが食べるのとおしゃべりに忙しく、気づいたら食べ物の写真は殆ど撮っていませんでした。。。
Well, it was certainly the best way to start out the new year.
We wish everyone a very happy and blessed year!
とても幸せな気分で新らしい年を迎えることができました。
どうかみなさまにも良い一年になりますように!

Breakfast Granola

When I eat store-bought granola or cereals, I often think that "I wish it had more nuts/fruits in it" or "This is little too sweet...". So I thought that I would make my own.
I like using tons of nuts and variety of dried fruits with moderate amount of brown sugar, maple syrup and a little bit of vanilla. For oats, Whole Food's organic rolled oats work very nicely. I toast them with nuts in the oven, then combine them with sugar mixture while they are still hot.
お店で買ったシリアルやグラノーラを食べると、たいていちょっと甘すぎるな、とか、もっとナッツやフルーツが入ってたらいいのに、と感じます。そうだ、自分の好みの材料を好きなだけ入れて作ればいいんだ、と思い、そうしてみました。
何回か作ってみて分かったのは、砂糖(私はブラウンシュガー、メープルシロップの組み合わせがお気に入り。それからバニラエッセンスも少々。)はかなり少なめでだいじょうぶ、オイルも全く入れない方が却っておいしいということです。好きなナッツ類、ドライフルーツを好きなだけ。オーツはWhole Food'sのオーガニックRolled Oatsがトーストしやすく、いいようです。ナッツ類とオーツをオーブンでローストして、熱いうちにシロップにまぶし、ドライフルーツを混ぜ込むるだけです。

Croissants

Mr. Ladybug has been dreaming about home-made croissant for the longest time. I've been excusing myself from making them, saying "Oh, it's too warm...the butter melts too fast during warm weather" but I cannot say that any more - it's the end of November. Making croissants is such a long affair...it takes me about 7 hours total (mostly chilling the dough in the fridge in between turns), however, it's definitely worth the effort. There is nothing like eating freshly baked croissants right out of the oven. We had hot chocolate ready while the croissants are baking and enjoyed them right away with drizzling honey.
ジョンに随分長いことクロワッサンをリクエストされていたのですが、作るのにあまりに長い時間がかかるため(材料を混ぜ合わせてから焼きあがるまでに7時間くらい。主に生地を冷蔵庫で寝かせるのにかかる時間ですが)、「いや、今はまだ暖かすぎるから」とずっと言い訳をしていました(大量のバターを使うので温度が高いと生地がベトベトして扱いにくいという理由)。しかし11月も終わり、さすがにこの言い訳はもう使えません。意を決してとりかかりました。けれども努力は十分に報われます。オーブンからの焼きたてにハチミツをつけて食べたら、もう止まらないおいしさです。このおやつの時間をさらに完璧なものにするために、焼き上がりにあわせてココアを淹れて待機しました。こういうことにはよく頭が働くんです(笑)。

Lemon-Glazed Blueberry Muffins

I used frozen wild blueberries we picked during the summer.
The muffins turned out to be very cuddly and fluffy :)
休みの日の朝食にブルーベリーマフィンを焼きました。この夏、山で摘んで冷凍しておいた野生のブルーベリーを使って、トッピングにはレモンの皮とジュースを使った飴をかけてみました。
フワフワでほおずりしたくなるようなマフィンができました。

Bearded tooth mushroom

Yesterday, Mr. Ladybug went to a nearby forest during his lunch break and found a large "bearded tooth" mushroom. This is the second time in a week that we found this highly prized mushroom.
It has been a great adventure to seek and eat wild mushrooms that are unavailable at grocery stores. And by focusing on a few easily identifiable families of mushrooms, we were able to avoid any chance of poisoning-our mushrooms have key characteristics that cannot be confused with any poisonous species.
Bearded tooth is one of them. It tastes great and has many health benefits (three types of antioxidants, memory improvement, cancer fighting compounds, etc.)

昨日ジョンが会社のお昼休みに近所の森に散歩に行ったところ、そこで巨大な山伏茸を見つけました(どんな田舎なんじゃ~!)。山伏茸は今が時期なのでしょう、今週2回目の収穫です。
日本と違って、こちらのスーパーはごく限られた種類のマッシュルームしか置いていないので、キノコ狩りは私達にとってまさに実益を兼ねた楽しみです。
まだビギナーレベルなので、絶対に安全な数種類のキノコに集中して、それだけを摘むことにしているので間違って毒キノコを食べる心配はありません。山伏茸もそのようなキノコのうちの一つで、見分けるのが簡単なうえにものすごく美味、しかも健康に大変よいことで知られているそうです(若返り、記憶力の向上、ガンの予防、等々)。



The bearded tooth looks like its name-it looks like a white ball of fur or hair. We have our pet, "Edna" the ladybug on top of the mushroom in order to show off its size. It was probably about 2 pounds (since it contained so much moisture).
昨日収穫した山伏茸。エドナちゃんがこんなに小さく見えます。ものすごく水分が多いのでどっしりと重く、2パウンド(1キロ弱)はあったでしょう。英語の名前のとおり、白いひげのかたまりのように見えます。何かハリネズミのようにも見えますね。


We've been enjoying it in soup, rice (takikomi-gohan), risotto, sautéed...we deep fried them with panko last night. It was very juicy and creamy soft, yet had a wonderful texture which was similar to fresh shrimp or oyster.
今まで味噌汁、炊き込みご飯、リゾット、ソテーなど色々な調理法で楽しみましたが、昨日は初めてフライにしてみました。熱を通したあともものすごくジューシーでやわらかいんですが、同時にシーフードのようなプリプリ感があって、ソース(ブルドック)とマヨネーズでいただいたら牡蠣フライを食べているようで得した気分になりました♪

International Food Festival

Before the month of October goes away, I want to make a note of this special event which took place earlier this month.
Our dear friends Mr. & Mrs. S host "International Food Festival" each fall at their 'one of the kind' beautiful log cabin, this being the 6th year. It truly is a grand event - their friends fly/drive from all parts of the United States and even from overseas to particiate. Each of the participants run a different ethnic food & beverage booth (We did Japanese), and guests can enjoy samples of numerous dishes and drinks all afternoon - all for free. The booths this year had the following themes: Japanese, Irish, Cajun, Maryland Crab, Moroccan, Southern, Garlic, Italian, Jewish, Polish, Lowcountry Cuisine, Chinese, and Dessert.

10月が終わってしまう前に、今月初めに友人宅で催された食のお祭りについて書いておきたいと思います。
今年で6回目のインターナショナル・フード・フェスティバル、その名のとおり世界各国の料理のブースが並び、ゲストはそれらを試食できるというものです。個人邸宅でのパーティーとは言うものの、200人近くの人が集まり、アメリカ各地、また国外からも彼らの友人達がこの日のために遠路はるばるやってきて、料理の腕をふるい、再会をたのしみます。
10以上のブースが、それぞれ何種類もの料理やデザート、飲み物を準備しているのでどんなに気をつけて少しずつ食べてもあっという間にお腹がいっぱいになってしまって、とうてい全て試せるものではありません。今年はアイリッシュ、ケイジャン、メリーランドの(有名な)カニ、モロッコ、アメリカ南部、にんにく、イタリアン、ユダヤ、ポーランド、ロウ・カントリー料理(ロウ・カントリーは特にサウス・カロライナ、ジョージアの海岸沿いを指すそうです)、チャイニーズ、デザートという内容で、それに加えて私達は日本食のブースを担当しました。

The dessert booth: this group came from upstate New York. The booth leader studied at Le Cordon Bleu School in Paris. The desserts were exquisite!
デザート・ブース:ニューヨーク州北部から来たグループがデザートブースを仕切っていましたが、リーダーの女性はコルドン・ブルーでお菓子を学んだそうです。数え切れないほどの焼き菓子、ケーキ、パイ、タルトが並んでいてどれもちゃんとした手作りの味、素晴らしいお菓子達でした。。。

Japanese booth - besides yakitori, we served Japanese style curry rice and gyuu-don this year. 我ら日本食ブース。焼き鳥は本格炭火焼。日本から持ってきた焼酎入り特製たれを使用しています。他にはカレーライス、牛丼を準備しました。


The party continue with camp fire and dancing... 暗くなったら焚き火、みんな踊ったり飲んだりとパーティーはまだまだ続きます。。。

Sweet Olive Tea 

We have a sweet olive tree in our yard, and it is blooming now in autumn. The tiny flowers (each approximately 4-5mm in diameter) emit a strong, heavenly fragrance. The plant is native to Asia, but is popular here in the southeastern region of the U.S. The Chinese have been using these flowers for tea-making and medicinal purposes for centuries. We steeped the flowers along with some Orange Pekoe tea that we bought last year in the Azores Islands, and the combination was fantastic. The flowers infuse the tea with an elegant, perfumed scent and flavor.
庭の銀木犀が花盛り、それはそれはよい香りです。ここNCでもポピュラーな庭木です。中国ではこの花をお茶に入れて飲む、ということで私たちもやってみました。正しくはどのような状態で花を使うのか分かりませんが、鍋にOrange Pekoeを沸かしたところへ大量の花をそのまま投入、2,3分待って淹れてみました。
上品なギンモクセイの香りがふんわり、後味も快く、羊羹とともに何だかちょっぴり優雅なお茶の時間となりました。

Mushroom Hunting

Mr. Ladybug, who has been studying about mushrooms for awhile now, recently started acting on his knowledge by hunting, collecting, and bringing home delicious, prized, choice mushrooms.
数年前からジョンはキノコに興味を持ち、それ以来しばらくキノコについてお勉強していました。その成果が実って、この頃はただ単に食べられるキノコではなく、珍しくておいしいキノコを見つけては家に持って帰ってきてくれるようになりました。

To be honest, Ladybug was suspicious at the beginning - until she tasted this wonderful king bolete (commonly known as porcini) mushroom which Mr. Ladybug found on our friend's property!
私は最初それらのキノコを不気味な思いで眺めていたのですが、最近友人宅の庭で見つけたポルチーニ茸を食べてからは、彼の知識と判断をすっかり信用するようになりました(笑)。



Porcini are common in dried form, especially in Italian cuisine. This was very large but fresh. Very meaty and sweet.

ポルチーニは乾燥したものがポピュラーで、特にイタリア料理にはよく使われますね。このポルチーニはかなり大きく立派で、ソテーでいただきましたが甘くてしこしこして最高でした。

This is a collection of various bolete (porcini) species of mushrooms. Pictured (from the top left, clockwise) are the black velvet bolete, a small king bolete, a piece of an unidentified shelf mushroom, and a bicolor bolete. We did not eat the shelf mushroom, but enjoyed the boletes with pasta.
ここには数種類のキノコがありますが、特に"ブラック・ベルベット”と呼ばれる真っ黒のキノコ(見た目も感触も本当にベルベットのようでした)が珍しく、火を通してもシャキシャキとした歯ざわりがあり、大変に美味でした(パスタといただきました)。


Above is a wonderful Eastern cauliflower mushroom specimen that we found while walking on a local hiking trail. It is a delicious edible, with a nice firm texture.
これもまたちょっと珍しいイースタン・カリフラワー・マッシュルームというキノコです。昨日近所の公園(森)を散歩中に見つけました。食感は舞茸にちょっと似ていたかな。


On the same hiking trail, we spotted a tree in a distance that was surrounded by a large amount of oyster mushrooms! We collected a large basketful of these treasures. Oyster mushrooms have a wonderful aroma and flavor that compliments many types of dishes, such as...
オイスター・マッシュルームです。これも同じハイキング・トレイルで見つけましたが、一箇所に大量に発生していたので、持って行ったバスケットがこれだけでいっぱいになってしまいました。お店で買うものはたまに変な苦味があったりして、オイスター・マッシュルームはあまり好きではなかったのですが、これは新鮮なだけあって香り高く、味もマイルドで、ご近所におすそ分けした以外一日で全部完食してしまいました。。。(食べすぎです)。

Above is miso soup filled prepared with some of the oyster mushrooms that we found. The sweet and earthy aroma that they add was amazing. Separately, we also sauteed the mushrooms and served them as a side dish for meatloaf, and later made Japanese-style, mushroom-infused rice (in Japan we call it kinoko no takikomi gohan).
色々な調理法でたのしみましたが、今朝はキノコのお味噌汁。 これはかなりおいしくて、今日は2回も作ってしまいました(笑)。
昨夜はソテーしてミート・ローフと一緒に。 そして今夜はキノコの炊き込みご飯にしました。

Banana Bread

Darkly speckled, overripe bananas on the kitchen counter are a good excuse to make banana bread. They infuse the bread with both moisture and plenty of flavor. Crunchy toasted walnuts adds a nice accent.
After telling one of my friends that I use old bananas for my banana bread, she always saves her blackened bananas for me (in exchenge for the banana bread) :)

古くなったバナナがキッチンにあったらバナナ・ブレッドを作ります。やわらかく熟して皮が黒くなってしまったようなバナナなら最高で、焼きあがりのブレッドは適度にやわらかく、芳醇なバナナの香りでいっぱいです。このバナナブレッドを食べた友人が、その後はいつも黒くなったバナナを私のためにとっておいてくれるようになりました(笑)。

Blueberries, Chanterelles, and Ponies!

Obsessed, our picking expedition is now going beyond the state border. We have been camping in the mountains to hike and pick almost every weekend, if not every other weekend lately and it has been the best summer ever!
During our last trip to the North Carolina mountains, somebody told us about the blueberries in Virginia. This man saw us picking and said "Have you been to Mt. X in Virginia? You'll see blueberries five times bigger than those and they are very sweet." So we went.
果物狩りのとりこになった私達の活動はついに州外にまで進出、今回はバージニア州までブルーベリーを摘みに行って参りました。と言うのは前回山へ行った際、親切な方が「バージニアのX山にはそれより5倍も大きくて甘いブルーベリーがわんさかなってるよ」と教えてくださったのです。それでこの夏はほぼ毎週末キャンプに出かけ、ハイキング、ブルーベリー狩りを満喫している訳なのです。

They might not be quite that large, but he was right. Some of the blueberries in there were very plump. There were just as many blackberries there as well. We saw a lot of people hiking with large buckets but never felt competitive as fruits were just so abundant :)
さてバージニアに着きました。ブルーベリーはそこまで大きくはなかったけれど、とにかく今が旬でものすごい量がなっています。ブラックベリーも同じくらい大量に生い茂っており、大きなバケツを持ってハイキングしている人をたくさん見かけました。
We really enjoyed the hiking aspect of the trip. It was rather an open pasture type of hiking with a beautiful mountain range in the distance and we even mingled with beautiful wild ponies!
ブルーベリー摘みはもちろんですが、今回はハイキングが本当によかったんです。ここは今まで行ったところと比べると一風変わっていて、オープンでほぼ平野。遠方にアパラチア山脈の美しい連なりをながめながらのんびりハイキングできます。野生のポニーもいたりして、大変に心が和みます。

Blackberry vines. They were just coming in.

Mr. Ladybug found Chanterelles in the camp site and these are great ones! They are wonderful mushrooms and pricy ($$) if you could ever find them at the supermarket. You would probably pay more than $20/lb.
私達のテントのすぐそばで、ジョンが何とシャントレル(調べたところ日本語では「アンズタケ」だそうです)を発見!しかもこんなに大きくきれいで新鮮です。この高級きのこはスーパーでもあまり見かけませんが、Whole Foodsにたまにあります。1ポンド20ドルはするでしょう。



On the hiking trail, Mr. Ladybug identified burdock leaves so we dug. We were also hoping to find burdocks so we carried a little shovel and gloves with us for an occasion like this. Luckily, we didn't have to dig very deep this time as these were itty-bitty ones (in spite of the size of the leaves) as you can see.

ハイキング中、ジョンがゴボウと思われる葉っぱを道ばたに発見(私にはただの雑草にしか見えなかったけど)。こんな時のために携帯していたシャベルを使って早速掘ってみたところ、やはりゴボウでした! こんなに小さいので(葉っぱは立派だったが)深く掘らずに済んで助かった。。。ちゃんとキンピラにしまーす。


This is one of the baby ponies. They are such a gentle and friendly creatures.

まだ赤ちゃんのポニー。ポニーという動物は何ておだやかで優しい気性を持っているんでしょう!この子はシャイでカメラを向けるとお母さんの影に隠れていました。
